  • 2 thick-cut beef chops (ribeye or sirloin preferred)
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and freshly cracked black pepper, to taste
  • 1 tsp paprika
  • Juice of half a lemon (optional for brightness)

Instructions

  1. Pat beef chops dry and season both sides generously with salt, pepper and paprika. Let rest 15 minutes at room temperature.
  2. Heat oil in heavy skillet over medium-high heat until shimmering. Sear beef chops 4–5 minutes per side, forming a deep golden crust.
  3. Reduce heat to medium-low. Add butter, garlic and rosemary. Continuously spoon the melted garlic-herb butter over chops (basting) for 2–3 minutes.
  4. Remove from heat, sprinkle with fresh parsley, squeeze lemon juice if desired and let rest for 5 minutes before serving.
