4 lobster tails (about 5–6 oz each), shells cut and meat lifted slightly
1/2 cup unsalted butter, melted
4 garlic cloves, minced
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
1 teaspoon paprika
Salt and black pepper to taste
Lemon wedges, for serving
Instructions
Preheat oven to broil (high) and position rack in the top third of the oven.
Use kitchen scissors to cut the top shell of each lobster tail lengthwise. Gently lift the meat above the shell, keeping it attached at the base.
In a bowl, combine melted butter, garlic, lemon juice, parsley, paprika, salt, and pepper.
Place lobster tails on a baking sheet or in a cast iron skillet. Spoon half the garlic butter mixture over the lobster meat.
Broil for 8–10 minutes or until lobster is opaque and lightly golden on top. Baste once more halfway through with remaining butter.
Serve hot with extra lemon wedges and drizzle any pan sauce over the top.
