2 lobster tails
1 lb large sea scallops, side muscle removed
3 tbsp unsalted butter
2 tbsp olive oil
4 garlic cloves, minced
1 tbsp fresh lemon juice
1 tsp Old Bay seasoning
1 tsp paprika
½ tsp Italian seasoning
Salt and freshly cracked black pepper, to taste
2 tbsp fresh parsley, chopped
Lemon slices, for serving
Instructions
Split the lobster tails lengthwise with kitchen shears and gently lift the meat over the shell. Pat the scallops completely dry and season both with Old Bay, paprika, salt, and pepper.
Heat the olive oil in a large skillet over medium-high heat. Sear the scallops for 2–3 minutes per side until a rich golden crust forms. Transfer them to a plate.
Reduce the heat to medium and melt the butter in the same skillet. Add the garlic and cook until fragrant, then place the lobster tails shell-side down. Spoon the garlic butter over the lobster for 5–7 minutes until the meat is tender and opaque.
Stir the lemon juice, Italian seasoning, and parsley into the remaining butter sauce. Return the scallops to the skillet and coat everything in the warm sauce.
Arrange the lobster tail in the center of a serving platter with the seared scallops surrounding it. Drizzle generously with the garlic butter sauce and garnish with fresh parsley and lemon slices.
Notes
Pat scallops dry before cooking for a better sear.
