  • 4 filet mignon steaks (about 2 inches thick)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter (for searing)
  • 4 tablespoons unsalted butter (for garlic butter sauce)
  • 3 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped parsley

Instructions

  1. Pat steaks dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat olive oil and 2 tablespoons butter in a heavy skillet over medium-high heat.
  3. Sear steaks 3–4 minutes per side for medium-rare, or to desired doneness. Remove and let rest.
  4. In the same pan, reduce heat to low and add butter, garlic, lemon juice, and zest. Stir until fragrant and melted.
  5. Return steaks to the pan and spoon butter sauce over each. Garnish with fresh parsley and serve immediately.

  • Let steaks come to room temp before cooking for even results.
  • Use a meat thermometer for precision (130°F for medium-rare).
