- 2.5 lbs beef chuck roast, cut into large chunks
- 1.5 lbs baby gold potatoes
- 6 cloves garlic, minced
- 1 stick (1/2 cup) unsalted butter
- 1 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & cracked black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: 1/4 cup beef broth for extra sauciness
- Heat olive oil in a skillet over medium-high heat. Sear beef chunks until browned on all sides.
- In the slow cooker, add seared beef, garlic, seasonings, Worcestershire sauce, and potatoes.
- Slice butter and scatter over everything.
- Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until beef is fork-tender and potatoes are buttery soft.
- Gently stir everything to coat in that garlic butter sauce. Garnish with chopped parsley and serve hot.
Notes
- Searing the beef first adds extra flavor.
- Optional beef broth can make the dish saucier.
