Ingredients

  • 2.5 lbs beef chuck roast, cut into large chunks
  • 1.5 lbs baby gold potatoes
  • 6 cloves garlic, minced
  • 1 stick (1/2 cup) unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & cracked black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1/4 cup beef broth for extra sauciness

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear beef chunks until browned on all sides.
  2. In the slow cooker, add seared beef, garlic, seasonings, Worcestershire sauce, and potatoes.
  3. Slice butter and scatter over everything.
  4. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until beef is fork-tender and potatoes are buttery soft.
  5. Gently stir everything to coat in that garlic butter sauce. Garnish with chopped parsley and serve hot.

Notes

  • Searing the beef first adds extra flavor.
  • Optional beef broth can make the dish saucier.
