1½ cups all-purpose flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream or Greek yogurt
1 cup Fruity Pebbles cereal (plus extra for topping)
Optional glaze: ½ cup powdered sugar + 1 tbsp milk
Instructions
Cream It All Together: Beat butter and sugar until light and fluffy. Add eggs and vanilla, mixing well.
Mix the Dry Team: In a separate bowl, whisk flour, baking powder, baking soda, and salt.
Combine & Fold In the Fun: Mix dry ingredients into the wet until just combined. Stir in sour cream, then gently fold in Fruity Pebbles.
Bake to Golden Goodness: Pour batter into a greased loaf pan, sprinkle extra cereal on top, and bake at 350°F (175°C) for 50–60 minutes.
Optional Glaze & Serve: Drizzle with powdered sugar glaze once cool and slice to enjoy.
Notes
For a moister bread, you can use Greek yogurt instead of sour cream.
This bread can be enjoyed warm or at room temperature.
