Crispy-edged, chewy-centered, and packed with fruity crunch, these Fruit and Nut Cookies are perfect for any occasion!

Ingredients

  • 225g unsalted butter, softened
  • 150g granulated sugar
  • 150g light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 280g all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 100g chopped pecans or walnuts
  • 75g dried cranberries
  • 75g raisins
  • 60g chopped dried cherries or apricots

Instructions

  1. Preheat oven to 175°C (350°F). Line trays with parchment.
  2. Cream butter and sugars until fluffy. Add eggs and vanilla.
  3. Mix flour, baking soda, and salt separately, then combine with wet mixture. Fold in nuts and fruits.
  4. Scoop dough onto tray, spaced evenly. Bake 10–12 min until golden at edges.
  5. Cool 2 min on tray before moving to rack.

Notes

  • Chill dough for thicker cookies.
  • Use mixed dried fruits for variety.
  • Don’t overbake to keep centers chewy.
