A delightful frozen dessert combining creamy cheesecake, caramelized pineapple, and a crunchy crumble.

Ingredients

  • 1½ cups crushed graham/digestive biscuits
  • ⅓ cup melted butter
  • 2 tbsp light brown sugar
  • 8 oz cream cheese (softened)
  • ⅓ cup icing sugar
  • 1 tsp vanilla essence
  • 2 cups vanilla ice cream (softened, not melted)
  • 1½ cups diced pineapple
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp cornstarch + 1 tbsp water
  • ½ cup flour
  • ¼ cup oats
  • ¼ cup brown sugar
  • ¼ cup cold butter, cubed
  • Vanilla ice cream scoop for garnish
  • Caramel drizzle for garnish

Instructions

  1. Mix biscuits, butter, and sugar. Press into a lined 8-inch pan and freeze for 10 minutes.
  2. Beat cream cheese, icing sugar, and vanilla. Fold in soft ice cream. Spread over the crust and freeze for 1–2 hours until firm.
  3. Sauté pineapple with butter and brown sugar for 5–6 minutes. Add cornstarch slurry and cook until thickened. Cool completely.
  4. Combine flour, oats, sugar, and butter. Bake at 175°C (350°F) for 10–12 minutes until golden. Cool.
  5. Layer cooled pineapple over frozen cheesecake, top with crumble, and freeze for 1 hour.
  6. Cut into squares and serve topped with ice cream and caramel drizzle.

Notes

  • Ensure the ice cream is softened but not melted for easy mixing.
  • Allow the cheesecake to set properly in the freezer for the best texture.
  • Garnish with additional pineapple or nuts for extra flavor.
