- 1 ½ cups shredded cheddar cheese
- 1 ½ cups cooked chicken breast, diced
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp black pepper
- 1 ½ cups all-purpose flour
- 3 eggs, beaten
- 2 cups seasoned breadcrumbs
- Vegetable or canola oil for frying
- Sliced green onions for garnish (optional)
- Mix mac and cheese, chicken, cheddar, and seasonings in a bowl. Chill for 30 minutes.
- Scoop mixture into balls (about 2 tablespoons each) and press firmly.
- Dredge each ball in flour, dip in beaten egg, and roll in breadcrumbs.
- Heat oil to 350°F and fry bites for 2–3 minutes until golden and crisp. Drain on paper towels.
