Ingredients

  • 2 cups cooked macaroni and cheese (cooled)
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups cooked chicken breast, diced
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • 1 ½ cups all-purpose flour
  • 3 eggs, beaten
  • 2 cups seasoned breadcrumbs
  • Vegetable or canola oil for frying
  • Sliced green onions for garnish (optional)

Instructions

  1. Mix mac and cheese, chicken, cheddar, and seasonings in a bowl. Chill for 30 minutes.
  2. Scoop mixture into balls (about 2 tablespoons each) and press firmly.
  3. Dredge each ball in flour, dip in beaten egg, and roll in breadcrumbs.
  4. Heat oil to 350°F and fry bites for 2–3 minutes until golden and crisp. Drain on paper towels.
  5. Sprinkle with green onions and serve with ranch, BBQ, or spicy ketchup.
