4 large chicken breasts
2 tbsp olive oil
2 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp Italian seasoning
Salt and black pepper, to taste
8 oz fresh mozzarella cheese, sliced
½ cup shredded Gruyère cheese
¼ cup grated Parmesan cheese
Fresh thyme, for garnish
3 large yellow onions, thinly sliced (for the French Onion Sauce)
3 tbsp butter
2 garlic cloves, minced
1 tbsp Worcestershire sauce
½ cup beef broth
½ cup heavy cream
½ tsp dried thyme (for the French Onion Sauce)
Salt and black pepper, to taste (for the French Onion Sauce)
Instructions
Cut a deep pocket into each chicken breast without slicing all the way through.
Season both sides with garlic powder, onion powder, thyme, Italian seasoning, salt, and pepper.
Stuff each chicken breast with slices of fresh mozzarella and a little Gruyère cheese. Secure with toothpicks if needed.
Heat the olive oil in a large skillet over medium-high heat and sear the chicken for 3–4 minutes per side until golden.
Transfer the chicken to a baking dish.
In the same skillet, melt the butter and cook the onions over medium-low heat for 20–25 minutes until deeply caramelized.
Add the garlic and Worcestershire sauce, then pour in the beef broth. Simmer for 3 minutes before stirring in the heavy cream and thyme.
Spoon the caramelized onion sauce around and over the chicken. Sprinkle with the remaining Gruyère and Parmesan.
Bake at 375°F (190°C) for 18–22 minutes, until the chicken reaches 165°F (74°C) and the cheese is golden and bubbly.
Garnish with fresh thyme and serve with mashed potatoes, rice, or crusty bread to soak up the rich French onion sauce.

Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
Feel free to add more cheese if you love a cheesy flavor.
