- 2 tablespoons olive oil
- 2 tablespoons unsalted butter

- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1/2 cup dry white wine (or broth)
- 1 1/2 cups beef or vegetable broth
- 1 tablespoon balsamic vinegar
- Fresh chopped parsley (for garnish)
- Heat olive oil and butter in a large deep skillet over medium heat.
- Add whole peeled onions and sear, turning occasionally, until golden brown on all sides (8–10 minutes).
- Season with salt, pepper, and sprinkle with sugar if using.
- Add minced garlic and thyme. Cook 1 minute until fragrant.
- Pour in white wine and simmer 2–3 minutes, scraping up browned bits.
- Add broth and balsamic vinegar. Liquid should come halfway up the onions.
- Cover and simmer gently for 25–30 minutes until onions are tender and sauce thickens.
- Remove lid for last 5 minutes to reduce and glaze the onions beautifully.
- Sprinkle with fresh parsley and serve warm.
