Ingredients

Scale
  • 2 cups plain Greek yogurt (full-fat)
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/4 teaspoon salt
  • Powdered sugar (for dusting)
  • Fresh whipped cream (for topping)
  • Fresh mint or berries (optional garnish)

Instructions

  1. Preheat oven to 325°F and line an 8-inch square pan with parchment paper.
  2. Whisk Greek yogurt, egg yolks, sugar, cornstarch, vanilla, and lemon juice until smooth.
  3. Beat egg whites with salt until stiff peaks form, then gently fold into the yogurt mixture.
  4. Pour batter into the pan and bake for 40–45 minutes until golden brown and slightly jiggly.
  5. Cool completely in the pan, then chill for at least 1 hour before serving.
  6. Dust with powdered sugar, top with whipped cream, and garnish as desired.

Notes

  • Use full-fat Greek yogurt for the creamiest texture.
  • Ensure egg whites are beaten to stiff peaks for maximum fluffiness.
  • Chilling helps the cake set for clean slices.
