1 cup unsalted butter, softened
½ cup powdered sugar
2 cups all-purpose flour
¼ tsp salt
1½ cups granulated sugar
¼ cup all-purpose flour
4 large eggs
⅔ cup fresh lemon juice
Zest of 2 lemons
2 cups mini marshmallows
½ cup marshmallow fluff
Instructions
Preheat oven to 350°F (175°C). Line a 9×13″ baking pan with parchment.
In a bowl, mix softened butter and powdered sugar until creamy. Add flour and salt; stir until crumbly. Press into the pan.
Bake crust 18–20 minutes until lightly golden. Let cool slightly.
In a separate bowl, whisk eggs, sugar, flour, lemon juice, and zest until smooth. Pour over the crust and bake 22–25 minutes until set. Cool completely.
In a saucepan, melt mini marshmallows and fluff together on low heat until smooth and spreadable.
Spread over the lemon layer evenly. Chill for 1 hour to set.
Slice into squares and dust with powdered sugar.
