  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 1½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • ⅔ cup fresh lemon juice
  • Zest of 2 lemons
  • 2 cups mini marshmallows
  • ½ cup marshmallow fluff

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13″ baking pan with parchment.
  2. In a bowl, mix softened butter and powdered sugar until creamy. Add flour and salt; stir until crumbly. Press into the pan.
  3. Bake crust 18–20 minutes until lightly golden. Let cool slightly.
  4. In a separate bowl, whisk eggs, sugar, flour, lemon juice, and zest until smooth. Pour over the crust and bake 22–25 minutes until set. Cool completely.
  5. In a saucepan, melt mini marshmallows and fluff together on low heat until smooth and spreadable.
  6. Spread over the lemon layer evenly. Chill for 1 hour to set.
  7. Slice into squares and dust with powdered sugar.
