FLUFFY JAPANESE-STYLE PANCAKES

Golden, cloud-soft, melt-in-your-mouth pancakes that are drizzled with warm maple syrup and topped with soft fruit.

Ingredients

  • 2 large eggs, separated
  • 1/4 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons sugar
  • 1/2 teaspoon lemon juice or vinegar
  • Butter (for the pan)
  • Warm maple syrup or honey
  • Soft fruit (mango, peach, or berries)
  • Dried herbs or powdered sugar (optional garnish)

Instructions

  1. In a bowl, whisk egg yolks with milk and vanilla until smooth.
  2. Sift in flour, baking powder, and salt. Mix just until creamy.
  3. In a separate bowl, beat egg whites with lemon juice until foamy. Gradually add sugar and whip to stiff, glossy peaks.
  4. Gently fold egg whites into batter in 2–3 additions, keeping it airy and fluffy.
  5. Heat a nonstick pan over low heat and lightly butter it.
  6. Spoon batter into tall rounds. Add a few drops of water to the pan, cover with a lid, and cook 5–6 minutes.
  7. Carefully flip, cover again, and cook another 4–5 minutes until puffed, golden, and custardy inside.

Notes

  • Keep heat LOW for tall, fluffy pancakes.
  • Do not overmix — air = fluff.
  • Covering the pan is the secret weapon.
