Instructions

  1. Whisk cottage cheese and eggs until mostly smooth.
  2. Stir in vanilla, sugar, and melted butter.
  3. Add flour, baking powder, and salt. Fold gently until combined.
  4. Heat a skillet with butter. Pour 2 tbsp batter per pancake.
  5. Cook 2–3 minutes until bubbles form, then flip and cook another 2 minutes.
