Ingredients

Scale
  • 2 filet mignon steaks (68 oz each), room temperature
  • Salt and freshly cracked black pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 sprig fresh rosemary
  • 1012 large shrimp, peeled and deveined
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon Dijon mustard
  • Pinch of nutmeg (optional)
  • Chopped parsley (for garnish)

Instructions

  1. Season steaks generously with salt, pepper, and garlic powder.
  2. Heat olive oil in a hot skillet over medium-high. Sear steaks 3–4 minutes per side until deeply browned.
  3. Add butter and rosemary, baste steaks for 1 minute. Remove and rest.
  4. In same pan, melt butter and sauté shrimp with garlic for 1–2 minutes per side until golden and just cooked. Remove shrimp.
  5. Lower heat, add butter for sauce, then pour in cream and Dijon. Simmer for 2–3 minutes.
  6. Stir in parmesan and nutmeg until silky.
  7. Place steaks back on plate, spoon cream sauce around, top with shrimp, and garnish with parsley.

Notes

  • Let steaks rest for 5 minutes for maximum juiciness.
  • Use a hot pan for a perfect crust.
  • Swap shrimp for scallops for a luxe twist.
