4 boneless, skinless chicken breasts
2 tbsp olive oil
Juice of 2 limes
1 tsp chili powder
1 tsp garlic powder
1/2 tsp cumin
Salt & pepper, to taste
Optional: 1/2 tsp smoked paprika for extra flavor kick
1 large avocado, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/2 cup corn (fresh, canned, or thawed frozen)
1/4 cup chopped cilantro
Juice of 1 lime
Salt & pepper, to taste
Instructions
Combine olive oil, lime juice, chili powder, garlic powder, cumin, paprika, salt, and pepper in a bowl. Coat chicken and marinate for 30 minutes to 1 hour.
Cook chicken on a grill or skillet over medium-high heat for 6–7 minutes per side, or until cooked through.
In a bowl, mix avocado, tomatoes, onion, corn, cilantro, lime juice, salt, and pepper.
Spoon generous scoops of avocado salsa over the hot chicken. Garnish with extra lime or cilantro.
Serve with rice, tortillas, or salad for a full meal.
