Fideo Mexican Noodle Soup is a spicy delight that offers a cozy comfort with its rich flavors and satisfying ingredients.

  • 2 tbsp vegetable oil
  • 7 oz (200g) fideo noodles or broken thin spaghetti
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, sliced (optional for heat)
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 4 cups vegetable or chicken broth
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt & pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, sliced (for serving)

Instructions

  1. Toast the Fideo Noodles: Heat oil in a large saucepan over medium heat. Add noodles and toast, stirring constantly, until golden brown.
  2. Add Aromatics: Stir in diced onion, garlic, and jalapeño. Cook for 2–3 minutes until softened.
  3. Mix in Tomatoes & Spices: Pour in the diced tomatoes with juices. Add cumin, chili powder, salt, and pepper. Stir well.
  4. Simmer It Up: Add broth and bring to a boil. Reduce heat and simmer for 10–12 minutes, or until noodles are tender.
  5. Serve & Squeeze: Ladle soup into bowls, top with fresh cilantro, and serve with lime wedges.

Notes

  • Adjust the heat by adding more or less jalapeño.
  • For a vegetarian version, use vegetable broth.
  • This soup can be made ahead and reheated for quick meals.
