- 2 tbsp vegetable oil
- 7 oz (200g) fideo noodles or broken thin spaghetti
- 1 small white onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, sliced (optional for heat)
- 1 can (14.5 oz) diced tomatoes, with juices
- 4 cups vegetable or chicken broth
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- Salt & pepper, to taste
- Fresh cilantro, chopped (for garnish)
- 1 lime, sliced (for serving)
- Toast the Fideo Noodles: Heat oil in a large saucepan over medium heat. Add noodles and toast, stirring constantly, until golden brown.
- Add Aromatics: Stir in diced onion, garlic, and jalapeño. Cook for 2–3 minutes until softened.
- Mix in Tomatoes & Spices: Pour in the diced tomatoes with juices. Add cumin, chili powder, salt, and pepper. Stir well.
- Simmer It Up: Add broth and bring to a boil. Reduce heat and simmer for 10–12 minutes, or until noodles are tender.
- Serve & Squeeze: Ladle soup into bowls, top with fresh cilantro, and serve with lime wedges.
Notes
- Adjust the heat by adding more or less jalapeño.
- For a vegetarian version, use vegetable broth.
- This soup can be made ahead and reheated for quick meals.
