A refreshing and zesty Feta Chickpea Salad that is perfect for a quick lunch or as a side dish, packed with protein and Mediterranean flavors.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, chopped
  • 1/4 red onion, finely diced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt & black pepper, to taste
  • Optional: 1/4 teaspoon dried oregano or za’atar

Instructions

  1. In a large bowl, toss chickpeas, cherry tomatoes, cucumber, and red onion together.
  2. Whisk lemon juice, olive oil, salt, pepper, and oregano until well combined.
  3. Pour the vinaigrette over the salad and gently mix.
  4. Sprinkle crumbled feta and chopped parsley on top.
  5. Serve right away or chill for 30 mins for extra flavor.

Notes

  • This salad is great for meal prep and can be stored in the fridge for a couple of days.
