Feta Beet Walnut Salad is a delicious and healthy power salad that combines roasted beets, mixed greens, and tangy feta cheese, topped with crunchy walnuts and a zesty dressing.

Ingredients

  • 4 medium beets, roasted and peeled
  • 4 cups mixed greens (arugula, spinach, and kale)
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup walnut halves (toasted for extra crunch)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. Wrap beets in foil and roast at 400°F for 45–50 minutes. Once tender, peel and slice.
  2. In a large bowl, toss arugula, spinach, and kale together.
  3. Top greens with beet slices, thin red onion, toasted walnuts, and crumbled feta.
  4. Whisk olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
  5. Drizzle dressing over the salad and give it a gentle toss. Serve chilled or at room temperature.

Notes
