Delicious eggplant chicken parmesan rolls that are a great comfort food for family dinners.

Ingredients

  • 3 large eggplants, sliced lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 2 cups marinara sauce
  • 1 cup heavy cream
  • 2 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/3 cup seasoned breadcrumbs
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Brush the eggplant slices with olive oil and season with salt and pepper. Arrange on baking sheets and roast for 12-15 minutes until soft and flexible. Allow to cool slightly.
  2. In a large bowl, combine shredded chicken, ricotta, mozzarella, Parmesan, garlic, Italian seasoning, and paprika. Mix until creamy and evenly combined.
  3. In a saucepan over medium heat, combine marinara sauce, heavy cream, garlic, basil, and oregano. Simmer for 5 minutes until smooth and flavorful.
  4. Spread a thin layer of sauce in the bottom of a baking dish. Place a generous spoonful of filling onto each eggplant slice. Roll tightly and place seam-side down in the baking dish. Repeat with the remaining slices.
  5. Pour the remaining sauce over the rolls. Sprinkle mozzarella cheese, Parmesan cheese, and breadcrumbs evenly over the top. Bake for 25-30 minutes until bubbly and deeply golden. Broil for 2-3 minutes for an extra crispy finish.
  6. Let rest for 10 minutes before serving. Garnish with fresh parsley and extra Parmesan cheese.
