1 lb baby potatoes (halved)
3 large carrots (peeled and chopped (or 1½ cups baby carrots))
1 cup green beans (trimmed)
2 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika
½ tsp dried thyme
½ tsp dried oregano
½ tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional for spice)
🔹 For Garnish:
1 tbsp fresh parsley (chopped)
1 tbsp grated Parmesan (optional)
1 tbsp lemon juice (for freshness)
Instructions
1️⃣ Preheat Oven:
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
2️⃣ Prepare the Vegetables:
In a large bowl, toss the potatoes and carrots with olive oil, garlic powder, smoked paprika, thyme, oregano, salt, and black pepper.
3️⃣ Roast the Potatoes & Carrots:
Spread the potatoes and carrots on the baking sheet in a single layer.
Roast for 25-30 minutes, tossing halfway through.
4️⃣ Add the Green Beans:
Remove the baking sheet from the oven and add the green beans.
Toss everything together and roast for another 10 minutes until the green beans are tender and the potatoes are golden brown.
5️⃣ Finish & Serve:
Drizzle with lemon juice, sprinkle fresh parsley, and add Parmesan if desired.
