Instructions

  1. In a mixing bowl, combine peanut butter, sugar, egg, vanilla, and baking soda. Stir until smooth.
  2. Scoop dough into tablespoon-sized balls and roll in your hands. Place on a baking sheet and flatten gently with a fork in a crisscross pattern.
  3. Bake at 350°F (175°C) for 10–12 minutes, until edges are set and bottoms are lightly golden.
  4. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
