A one-pot cheesy dinner idea your whole family will love!

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage (or a mix!)
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (6 oz) can tomato paste
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can crushed tomatoes
  • 5 cups beef or chicken broth
  • 810 lasagna noodles, broken into chunks
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan
  • Salt & pepper, to taste
  • Fresh parsley or basil for garnish

Instructions

  1. In a large soup pot, heat olive oil and cook the ground beef (or sausage) with diced onion until browned. Stir in garlic and spices.
  2. Stir in tomato paste, diced tomatoes, and crushed tomatoes. Mix well until thick and saucy.
  3. Add the broth and bring it to a gentle boil. Toss in the broken lasagna noodles and cook uncovered for 12–15 minutes, stirring often.
  4. Lower heat and stir in mozzarella and parmesan until melted. Add dollops of ricotta into the pot or top each bowl individually.
  5. Garnish with parsley or basil and serve hot!

Notes

  • Bonus points for serving with crusty garlic bread.
  • Adjust the spice level by adding more or less crushed red pepper flakes.
