- 1 tbsp olive oil
- 1 lb ground beef or Italian sausage (or a mix!)
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 2 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 1 (6 oz) can tomato paste
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can crushed tomatoes
- 5 cups beef or chicken broth
- 8–10 lasagna noodles, broken into chunks
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan
- Salt & pepper, to taste
- Fresh parsley or basil for garnish
- In a large soup pot, heat olive oil and cook the ground beef (or sausage) with diced onion until browned. Stir in garlic and spices.
- Stir in tomato paste, diced tomatoes, and crushed tomatoes. Mix well until thick and saucy.
- Add the broth and bring it to a gentle boil. Toss in the broken lasagna noodles and cook uncovered for 12–15 minutes, stirring often.
- Lower heat and stir in mozzarella and parmesan until melted. Add dollops of ricotta into the pot or top each bowl individually.
- Garnish with parsley or basil and serve hot!
Notes
- Bonus points for serving with crusty garlic bread.
- Adjust the spice level by adding more or less crushed red pepper flakes.
