  • 1 ¼ cups warm water (about 110°F)
  • 2 tbsp honey or sugar
  • 1 ½ tsp salt
  • ¾ cup dried cranberries
  • ¾ cup walnuts, roughly chopped
  • 1 tbsp olive oil

Instructions

  1. Activate the yeast by mixing warm water, yeast, and honey. Let it foam for 5–10 minutes until bubbly.
  2. Add flour, salt, olive oil, cranberries, and walnuts. Stir until a shaggy dough forms.
  3. Knead for 8–10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise for 1–1½ hours until doubled.
  5. Shape into a round loaf, let rest 30 minutes, then bake at 400°F (205°C) for 35–40 minutes until golden.
