3 tablespoons unsalted butter
1 bag (10 oz) mini marshmallows
6 cups Rice Krispies cereal
1½ cups semi-sweet chocolate chips (or chocolate melts)
¼ cup holiday sprinkles (red, green, white)
Optional: ½ tsp vanilla extract or a pinch of salt
Melt the butter in a large pot over medium heat, then stir in the marshmallows until fully melted.
Quickly stir the Rice Krispies into the marshmallow mix until fully coated.
Let the mixture cool slightly, then grease your hands and roll into 1.5-inch balls.
Melt the chocolate chips and dip the bottom half of each ball into the chocolate.
Top with festive sprinkles and let set at room temperature or chill for 10-15 minutes.
Notes
For a smoother texture, use chocolate melts instead of chocolate chips.
If the mixture is too sticky, lightly dampen your hands with water while rolling.
Store in an airtight container at room temperature for up to 3 days.
