- 2 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups vegetable or chicken broth
- 2 cups milk (whole or 2%)
- 2 cups broccoli florets (fresh or frozen)
- 2 cups sharp cheddar cheese, shredded
- Salt & pepper to taste
- Extra shredded cheese for topping (optional)
- Crusty bread for serving
- In a pot over medium heat, melt the butter and cook the onions until soft and translucent. Add garlic and cook another minute.
- Stir in flour and cook for 1–2 minutes, creating a light roux. Slowly whisk in broth and milk until smooth.
- Add the broccoli florets and simmer for 10–12 minutes until tender.
- Reduce the heat and stir in the cheddar cheese until fully melted and creamy.
- Add salt and pepper to taste. Ladle into bowls, top with extra cheddar if desired, and serve with crusty bread.
