A quick and easy recipe for creamy broccoli cheddar soup, perfect for a comforting weeknight dinner.

  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups vegetable or chicken broth
  • 2 cups milk (whole or 2%)
  • 2 cups broccoli florets (fresh or frozen)
  • 2 cups sharp cheddar cheese, shredded
  • Salt & pepper to taste
  • Extra shredded cheese for topping (optional)
  • Crusty bread for serving

Instructions

  1. In a pot over medium heat, melt the butter and cook the onions until soft and translucent. Add garlic and cook another minute.
  2. Stir in flour and cook for 1–2 minutes, creating a light roux. Slowly whisk in broth and milk until smooth.
  3. Add the broccoli florets and simmer for 10–12 minutes until tender.
  4. Reduce the heat and stir in the cheddar cheese until fully melted and creamy.
  5. Add salt and pepper to taste. Ladle into bowls, top with extra cheddar if desired, and serve with crusty bread.

Notes

  • This soup can be made with fresh or frozen broccoli.
  • For a spicier kick, consider adding a pinch of cayenne pepper.
