- 2 soft flour tortillas
- 3 large eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced tomatoes
- 1 tbsp chopped fresh cilantro
- 2 tbsp sour cream or Greek yogurt
- 1 tsp butter or oil for cooking
- Salt & pepper to taste
- Scramble the eggs in a skillet with butter until soft and fluffy. Season with salt and pepper.
- Warm the tortillas in the microwave for 15 seconds or in a dry pan.
