  • 1 1/2 cups cold milk (dairy or plant-based)
  • 1/2 cup sweetened condensed milk
  • 1 cup whipped topping (plus extra for garnish)
  • 1 cup crushed shortbread or vanilla cookies
  • Zest of 1 lemon
  • Fresh mint leaves (for garnish)

Instructions

  1. In a bowl, whisk together the lemon pudding mix and cold milk until it thickens (about 2 minutes).
  2. Stir in sweetened condensed milk and fold in whipped topping until smooth and fluffy.
  3. In serving glasses, layer crushed cookies, lemon mousse, and more whipped topping. Repeat if desired.
