- 24 Oreo cookies (crushed)
- 1/4 cup melted butter
- 2 cups cream cheese (softened)
- 1 cup sour cream
- 1 1/2 cups dark chocolate chips (melted)
- 3/4 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1/2 cup dark chocolate chips
- Fresh raspberries
- Whipped cream
- Mint leaves
- Raspberry coulis
- Preheat oven to 325°F (160°C). Press Oreo crust into pan. Bake for 8 minutes, cool.
- Beat cream cheese, sugar, and sour cream until smooth. Add eggs one at a time. Stir in vanilla and melted chocolate.
- Pour over crust, bake in a water bath for 50–60 minutes. Chill at least 4 hours or overnight.
- Warm cream and pour over chocolate chips. Stir until smooth. Spread ganache on chilled cheesecake.
- Garnish with raspberries, whipped cream, mint, and coulis. Slice and serve.
