- 4 large flour tortillas
- 1 ½ cups cottage cheese
- 1 tbsp Greek yogurt
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh parsley, chopped
- 1 small garlic clove, minced
- 1 large cucumber, thinly sliced into ribbons
- ½ red bell pepper, thinly sliced
- Salt & black pepper to taste
- Optional: squeeze of lemon juice
- Mix cottage cheese, Greek yogurt, dill, parsley, garlic, salt, pepper, and lemon juice in a bowl.
- Warm tortillas in a skillet for 20–30 seconds per side.
- Spread the cottage cheese mixture on each tortilla.
- Add cucumber and bell pepper slices evenly.
- Roll tortillas tightly, tucking in the sides.
- Slice diagonally and serve.
Notes
- Best served fresh but can be refrigerated for up to 2 days.
- Use whole wheat tortillas for extra fiber.
