- 6 large eggs
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan
- 1 cup cooked spinach (fresh or frozen, well-drained)
- ½ cup milk or cream
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- Optional: pinch of red pepper flakes for a kick
- Preheat oven to 375°F and grease a 9-inch round baking dish or deep pie pan.
- In a large bowl, whisk together eggs, ricotta, milk, garlic powder, salt, and pepper.
- Fold in the spinach, mozzarella, and parmesan until well combined.
- Pour the mixture into the prepared dish. Bake for 40–45 minutes or until the center is set and the top is golden.
- Let rest 10 minutes before slicing. Serve warm or chilled.
