  • 6 large eggs
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • 1 cup cooked spinach (fresh or frozen, well-drained)
  • ½ cup milk or cream
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch of red pepper flakes for a kick

Instructions

  1. Preheat oven to 375°F and grease a 9-inch round baking dish or deep pie pan.
  2. In a large bowl, whisk together eggs, ricotta, milk, garlic powder, salt, and pepper.
  3. Fold in the spinach, mozzarella, and parmesan until well combined.
  4. Pour the mixture into the prepared dish. Bake for 40–45 minutes or until the center is set and the top is golden.
  5. Let rest 10 minutes before slicing. Serve warm or chilled.
