Crockpot Chicken Chowder is a creamy, cozy, and effortless slow cooker comfort meal that is perfect for family dinners.

  • 1 1/2 lbs boneless skinless chicken breasts
  • 1 (15 oz) can corn (or 1 1/2 cups frozen corn)
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 1 cup heavy cream or half-and-half
  • 1 tbsp cornstarch (optional for thickening)
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley or chives for garnish

Instructions

  1. Layer & Let It Cook: Place chicken, corn, carrot, celery, onion, garlic, broth, thyme, paprika, salt, and pepper into your crockpot. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  2. Shred the Chicken: Remove chicken, shred it with two forks, and return to pot. Stir it back in.
  3. Make It Creamy: Stir in heavy cream or half-and-half. For a thicker texture, mix cornstarch with 2 tbsp water and stir in.
  4. Add Optional Cheese: Stir in cheddar cheese if using and let it melt.
  5. Garnish & Serve: Ladle into bowls, top with chopped parsley or chives.
