1 1/2 lbs boneless skinless chicken breasts
1 (15 oz) can corn (or 1 1/2 cups frozen corn)
1 large carrot, diced
1 celery stalk, diced
1 small onion, chopped
2 cloves garlic, minced
2 cups chicken broth
1 tsp dried thyme
1/2 tsp smoked paprika
Salt & pepper to taste
1 cup heavy cream or half-and-half
1 tbsp cornstarch (optional for thickening)
1/2 cup shredded cheddar cheese (optional)
Fresh parsley or chives for garnish
Instructions
Layer & Let It Cook: Place chicken, corn, carrot, celery, onion, garlic, broth, thyme, paprika, salt, and pepper into your crockpot. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Shred the Chicken: Remove chicken, shred it with two forks, and return to pot. Stir it back in.
Make It Creamy: Stir in heavy cream or half-and-half. For a thicker texture, mix cornstarch with 2 tbsp water and stir in.
Add Optional Cheese: Stir in cheddar cheese if using and let it melt.
Garnish & Serve: Ladle into bowls, top with chopped parsley or chives.
