  • 3 lbs bone-in beef short ribs
  • Salt & pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 3 large carrots, peeled and chopped
  • 2 cups beef broth
  • ½ cup red wine (optional, but flavor-packed)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 sprigs fresh thyme
  • 2 sprigs rosemary
  • 1 bay leaf

Instructions

  1. Season ribs generously with salt and pepper. In a hot skillet, sear them on all sides until browned.
  2. Add sliced onion, garlic, and carrots to the bottom of your slow cooker. Place seared ribs on top.
  3. In a bowl, whisk together beef broth, red wine, tomato paste, and Worcestershire. Pour over the ribs, then toss in thyme, rosemary, and bay leaf.
  4. Cover and cook on low for 8 hours or until meat is fall-off-the-bone tender.
  5. Remove herbs and bay leaf. Serve ribs with mashed potatoes, polenta, or buttery noodles, drizzled with sauce.

Notes

  • For added flavor, consider marinating the ribs overnight.
  • Feel free to adjust vegetables to your liking; potatoes or celery can be great additions.
  • Leftovers can be stored in the fridge for up to 3 days.
