12 egg roll wrappers
1 lb medium shrimp, peeled, deveined, and chopped
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 cloves garlic, minced
2 tbsp mayonnaise
1 tsp Old Bay seasoning
½ tsp paprika
½ tsp garlic powder
2 tbsp chopped green onions
Salt and black pepper, to taste
Vegetable oil, for frying
Instructions
In a bowl, combine the cream cheese, mozzarella, Parmesan, mayonnaise, garlic, Old Bay seasoning, paprika, garlic powder, green onions, salt, and pepper. Fold in the chopped shrimp.
Spoon 2–3 tablespoons of filling onto each egg roll wrapper. Fold in the sides, roll tightly, and seal the edge with a little water.
Heat vegetable oil to 350°F (175°C) and fry the rolls in batches for 3–4 minutes, turning occasionally until evenly golden brown and crispy.
Transfer the fried shrimp rolls to a paper towel-lined plate to drain any excess oil. Let them rest for 2 minutes.
Garnish with chopped green onions and serve hot with sweet chili sauce, spicy mayo, or garlic aioli.
