2 large eggplants, sliced into thick rounds
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup breadcrumbs
1/2 cup grated parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon garlic powder
2 eggs, beaten
1 1/2 cups marinara sauce
1 1/2 cups fresh mozzarella cheese, sliced
1/4 cup grated parmesan cheese
Fresh basil ribbons
Red pepper flakes
Extra basil
Olive oil drizzle
Instructions
Prepare the eggplant: Slice eggplants into thick rounds and lightly brush with olive oil. Season with garlic powder, Italian seasoning, smoked paprika, salt, and black pepper.
Coat until crispy: Dip each eggplant slice into beaten eggs, then coat with the breadcrumb and parmesan mixture until evenly covered.
Bake to golden perfection: Arrange coated eggplant rounds on a baking sheet and bake at 425°F (220°C) for 25–30 minutes, flipping halfway through, until crispy and golden brown.
Add sauce & cheese: Top each eggplant round with marinara sauce and slices of fresh mozzarella cheese. Sprinkle with grated parmesan.
Broil until bubbly: Return to the oven and broil for 3–5 minutes until the cheese is melted, bubbly, and slightly golden.
Garnish & serve: Finish with fresh basil ribbons, red pepper flakes, and a drizzle of olive oil. Serve hot and enjoy every crispy cheesy bite.
