4 boneless chicken thighs or breasts
Salt and black pepper to taste
1/2 tsp paprika
1/2 tsp garlic powder
1/2 cup flour
2 eggs, beaten
1 cup breadcrumbs
1/4 cup olive oil (for frying)
4 tbsp butter
3 garlic cloves, minced
2 tbsp chopped fresh parsley
1 tbsp chopped chives or thyme
Juice of 1/2 lemon
Instructions
Season chicken with salt, pepper, paprika, and garlic powder.
Coat each piece in flour, dip in beaten eggs, then coat with breadcrumbs.
Heat olive oil in a large skillet over medium heat. Fry chicken on both sides until crispy and golden, about 5–6 minutes per side. Remove and set aside.
In the same pan, melt butter. Add garlic and cook until fragrant. Stir in herbs and lemon juice.
Return chicken to the pan, spoon sauce over the top, and simmer for 2 minutes.
Garnish with more fresh herbs and serve hot.
Notes
Pound chicken to even thickness for uniform cooking.
Use panko breadcrumbs for extra crispiness.
