4 white fish fillets (cod, halibut or haddock)
1/2 cup all-purpose flour
2 eggs, beaten
1 cup panko breadcrumbs
1/2 cup finely grated hard cheese (like Parmesan or mature cheddar)
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
1 tablespoon olive oil (for drizzling or pan-frying)
1 cup shredded sharp cheddar cheese (for cheese sauce)
Salt, pepper and a pinch of nutmeg (for cheese sauce)
Fresh chives, finely chopped (optional)
1 lb baby potatoes, halved
1 tablespoon olive oil (for potatoes)
1 teaspoon dried oregano (for potatoes)
Salt and black pepper (for potatoes)
Chopped parsley or chives for garnish
Instructions
Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, oregano, salt, and pepper. Spread on a baking tray cut-side down. Roast for 30–35 minutes or until golden and crispy.
Set up three bowls for dredging: one with flour, one with beaten eggs, and one with a mixture of panko, cheese, garlic powder, paprika, salt, and pepper. Coat each fillet in flour, dip in egg, then press into the cheesy breadcrumb mixture. Place on a baking sheet or skillet and drizzle lightly with olive oil. Bake at 400°F (200°C) for 15–18 minutes, or pan-fry 3–4 minutes per side until golden and crispy.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, bring to a simmer until thickened. Remove from heat, stir in shredded cheese, season with salt, pepper, and nutmeg. Mix until smooth and creamy.
Place a crispy fish fillet on each plate with a spoonful of hot cheese sauce underneath. Add roasted baby potatoes on the side and garnish everything with chopped chives or herbs.
Notes
Use firm white fish to hold shape while cooking.
Don’t skip the cheese in the breadcrumb mix — it creates a crisp, nutty crust.
