1 large butternut squash, peeled and cubed
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp crushed red pepper flakes
Salt and black pepper to taste
1/3 cup crumbled feta cheese
1/4 cup honey
1/2 tsp chili flakes
1/4 tsp apple cider vinegar
Fresh parsley or cilantro for garnish
Instructions
Preheat oven to 220°C (425°F). Toss squash with olive oil, paprika, garlic, onion powder, chili flakes, salt, and pepper. Spread on a lined baking sheet.
Roast for 25–30 minutes, flipping halfway, until golden and crisp.
Warm honey in a small saucepan. Add chili flakes and vinegar, then simmer for 2–3 minutes. Remove from heat.
Arrange roasted squash on a platter, drizzle with hot honey, and sprinkle feta and herbs on top.
