Crispy buffalo chicken cutlets that are saucy, spicy, and absolutely addictive!

Ingredients

  • 4 boneless, skinless chicken breasts (pounded thin)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Oil for frying
  • 3/4 cup Buffalo sauce
  • 2 tablespoons melted butter
  • 1 tablespoon honey (optional, for balance)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Season chicken cutlets with salt, pepper, garlic powder, and paprika.
  2. Set up breading station: flour in one bowl, beaten eggs in another, panko mixed with Parmesan in a third.
  3. Dredge chicken in flour, dip in egg, then coat generously with panko mixture.
  4. Heat oil in a large skillet over medium-high heat. Fry cutlets 3–4 minutes per side until golden brown and crispy.
  5. In a small bowl, mix Buffalo sauce, melted butter, and honey.
  6. Spoon or brush warm sauce over crispy cutlets.
  7. Sprinkle with fresh parsley and serve immediately.

Notes

  • Don’t overcrowd the pan to keep crust crispy
  • Use a wire rack to prevent soggy bottoms
  • Adjust spice level with mild or extra hot sauce
  • Bake at 220°C (425°F) for 18–20 minutes as a lighter option
