Crispy Birria Flautas are crunchy, cheesy, and beefy rolls filled with shredded birria beef and cheese, served with a flavorful consomé dip.

Ingredients

  • 2 cups shredded birria beef (or slow-cooked chuck roast)
  • 6 small flour or corn tortillas
  • 1 cup shredded Oaxaca or mozzarella cheese
  • Oil for frying (vegetable or canola)
  • 1½ cups reserved birria broth or beef stock (for the Consomé Dip)
  • 1 tsp chili powder
  • ½ tsp cumin
  • 1 garlic clove, minced
  • Salt to taste
  • Optional: fresh chopped cilantro and diced onion for topping

Instructions

  1. Roll the Flautas Tight: Place shredded birria and cheese into each tortilla. Roll tightly and secure with a toothpick if needed.
  2. Fry to Golden Perfection: Heat oil in a skillet and fry flautas until golden and crisp on all sides. Drain on paper towels.
  3. Heat Up the Consomé: In a small pot, simmer birria broth with garlic, chili powder, cumin, and salt.
  4. Serve ‘Em Up Hot: Plate flautas with a cup of consomé on the side. Garnish with lime wedges, cilantro, and diced onion.
  5. Dunk, Bite, Repeat: Dip the crispy flautas straight into the hot consomé and devour.
