Crispy baked eggplant parmesan that’s easy and delicious, featuring layers of crispy eggplant, marinara sauce, and melted cheese.

Ingredients

  • 2 large eggplants, sliced into rounds
  • 1 teaspoon salt
  • 2 eggs
  • 1/4 cup milk
  • 1 1/2 cups Italian breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cups marinara sauce
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Slice eggplants into thick rounds and sprinkle with salt. Let sit for 20 minutes to remove bitterness, then pat dry thoroughly.
  2. In one bowl whisk eggs and milk together. In another bowl combine breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, and black pepper. Dip eggplant slices into egg mixture, then coat evenly in breadcrumb mixture.
  3. Arrange breaded eggplant on a greased baking sheet. Drizzle lightly with olive oil and bake at 425°F (220°C) for 25 minutes, flipping halfway through until crispy and golden brown.
  4. Heat olive oil in a saucepan and sauté garlic until fragrant. Stir in marinara sauce and oregano, then simmer for 10 minutes for deeper flavor.
  5. Spread a layer of sauce in a baking dish. Add crispy eggplant slices, spoon extra marinara over each piece, then top generously with mozzarella and parmesan cheese.
  6. Bake at 375°F (190°C) for 20–25 minutes until the cheese is bubbly, melted, and slightly golden on top.
  7. Sprinkle with fresh parsley and extra parmesan before serving hot.

  • Serve with spaghetti, garlic bread, Caesar salad, roasted vegetables, or creamy mashed potatoes for the ultimate comfort meal.
  • Air fry the eggplant for less oil.
