Creamy White Chicken Chili is a comforting one-pot dish that combines shredded chicken, white beans, corn, and spices, creating a rich and creamy texture perfect for weeknight dinners.

  • 1 lb cooked shredded chicken (rotisserie works great)
  • 2 cans white beans, drained and rinsed
  • 1 can sweet corn, drained
  • 1 can diced green chiles (4 oz)
  • 3 cups chicken broth
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon oregano
  • 1 (8 oz) block cream cheese, cubed
  • Salt & pepper to taste
  • Optional toppings: shredded cheddar, cilantro, tortilla chips, sour cream

Instructions

  1. In a large pot over medium heat, sauté onion and garlic until fragrant. Stir in cumin, chili powder, and oregano.
  2. Stir in chicken, white beans, corn, green chiles, and chicken broth. Bring to a gentle simmer.
  3. Add cream cheese cubes and stir until fully melted and creamy. Let simmer for 10–15 minutes to thicken slightly.
  4. Season with salt and pepper to your liking. Let it simmer longer if you want it thicker.
  5. Serve hot topped with shredded cheddar, cilantro, and tortilla chips.
