A creamy and cheesy vegetable casserole perfect for cozy family dinners, featuring broccoli, cauliflower, and carrots in a rich sauce.

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • Salt and pepper to taste
  • 1/2 tsp paprika
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped parsley

Instructions

  1. Steam broccoli, cauliflower, and carrots until just tender.
  2. Melt butter in a pan, sauté garlic, then whisk in flour. Slowly add milk and cream, stirring until thick.
  3. Stir in cheddar and mozzarella until melted and smooth.
  4. Mix veggies with the sauce, season with salt, pepper, and paprika, then transfer to a baking dish.
  5. Sprinkle Parmesan on top and bake at 375°F (190°C) for 20–25 minutes until golden and bubbly.

Notes

  • For added flavor, consider adding other vegetables like bell peppers or mushrooms.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
