- 1 lb Italian sausage (mild or spicy), crumbled
- 1 tbsp olive oil (if needed)
- 1 small onion, chopped
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes (optional)
- 1 (15 oz) can diced tomatoes, drained
- 4 cups chicken broth
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and black pepper to taste
- Optional: grated Parmesan for topping
- Thick crusty bread for serving
- In a large pot over medium heat, cook sausage until browned and cooked through. If there’s excess grease, drain it.
- Add onion and cook until soft, about 3–4 minutes. Toss in garlic, Italian seasoning, and red pepper flakes. Stir until fragrant.
- Add diced tomatoes and chicken broth. Bring to a simmer and cook for 10 minutes.
- Stir in heavy cream and spinach. Simmer for another 3–5 minutes until the spinach is wilted and everything is creamy.
- Ladle into bowls, top with cracked pepper and Parmesan if desired. Serve with crusty bread.
Notes
- This soup can be made with either mild or spicy Italian sausage depending on your preference.
- Feel free to adjust the amount of crushed red pepper flakes for desired heat.
- For a lighter version, you can substitute heavy cream with half-and-half or a non-dairy alternative.
