Creamy Tuscan Sausage Soup is a comforting and hearty dish packed with Italian flavors, perfect for a weeknight dinner.

Ingredients

  • 1 lb Italian sausage (mild or spicy), crumbled
  • 1 tbsp olive oil (if needed)
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • 1 (15 oz) can diced tomatoes, drained
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • Optional: grated Parmesan for topping
  • Thick crusty bread for serving

Instructions

  1. In a large pot over medium heat, cook sausage until browned and cooked through. If there’s excess grease, drain it.
  2. Add onion and cook until soft, about 3–4 minutes. Toss in garlic, Italian seasoning, and red pepper flakes. Stir until fragrant.
  3. Add diced tomatoes and chicken broth. Bring to a simmer and cook for 10 minutes.
  4. Stir in heavy cream and spinach. Simmer for another 3–5 minutes until the spinach is wilted and everything is creamy.
  5. Ladle into bowls, top with cracked pepper and Parmesan if desired. Serve with crusty bread.

Notes

  • This soup can be made with either mild or spicy Italian sausage depending on your preference.
  • Feel free to adjust the amount of crushed red pepper flakes for desired heat.
  • For a lighter version, you can substitute heavy cream with half-and-half or a non-dairy alternative.
