  • 3 large boneless, skinless chicken breasts, cut into thick chunks
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes (in oil), drained
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • 1 tablespoon chopped fresh parsley
  • Steamed broccoli for serving
  • Roasted baby potatoes for serving

Instructions

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high. Sear chicken pieces 4–5 minutes until golden and cooked through. Remove and set aside.
  3. In the same pan, sauté garlic for 30 seconds. Add sun-dried tomatoes and red pepper flakes.
  4. Pour in chicken broth and simmer 2 minutes, scraping up browned bits.
  5. Stir in heavy cream and Parmesan. Simmer until sauce thickens slightly.
  6. Add spinach and cook until wilted.
  7. Return chicken to the pan and coat well in the creamy sauce. Simmer 2–3 minutes.
  8. Garnish with parsley and serve hot with broccoli and roasted potatoes.
