Creamy Tuscan Chicken is a delightful one-pan recipe featuring golden, juicy chicken thighs or breasts, sautéed with garlic, spinach, and mushrooms in a luxuriously creamy sauce.

  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 cups baby potatoes, halved
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 3 garlic cloves, minced
  • 1/2 teaspoon chili flakes (optional)
  • 1 tablespoon butter
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan
  • 1 teaspoon dried thyme
  • Fresh chopped parsley for garnish

Instructions

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same pan, add potatoes and cook until lightly browned and tender (about 10 minutes). Remove and set aside.
  4. Melt butter in the skillet. Add garlic and sauté 30 seconds until fragrant.
  5. Add mushrooms and cook until softened. Stir in spinach and cook until wilted.
  6. Pour in chicken broth and cream. Simmer gently for 3–4 minutes.
  7. Stir in parmesan and thyme until sauce thickens.
  8. Return chicken and potatoes to the pan. Spoon sauce over and simmer 2–3 minutes.
  9. Garnish with fresh parsley before serving.

  • Serve with crusty bread to soak up the sauce.
  • Swap potatoes for pasta or rice.
  • Add sun-dried tomatoes for extra Tuscan flavor.
  • Don’t overcrowd the pan while searing.
