- 2 cans (15 oz) butter beans, drained & rinsed
- 3 tbsp butter
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, sliced
- ½ tsp red pepper flakes (optional)
- ½ cup vegetable broth
- ¼ cup grated parmesan cheese
- 1 tbsp fresh parsley, chopped
- Salt & black pepper to taste
- Heat butter and olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Stir in sun-dried tomatoes and red pepper flakes for 1–2 minutes.
- Add butter beans and vegetable broth, simmer for 5–7 minutes.
- Stir in parmesan cheese until melted.
- Season with salt and pepper.
- Sprinkle fresh parsley on top and serve warm.
