Ingredients
Scale
1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 small onion, finely chopped
3–4 garlic cloves, minced
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
1 (14.5 oz) can diced tomatoes (with juices)
4 cups chicken broth
1/2 cup heavy cream
1 package (9 oz) refrigerated cheese tortellini
2 cups fresh spinach (or kale)
Salt & black pepper, to taste
Fresh parsley or basil, chopped (for garnish)
Grated parmesan cheese (optional, for serving)
Instructions
In a large soup pot, cook the Italian sausage over medium heat until golden and fully cooked—this is your easy comfort food foundation. Remove and set aside.
In the same pot, add olive oil, then sauté the chopped onion until soft (about 5 mins). Toss in the garlic, Italian seasoning, and crushed red pepper flakes for that quick flavor explosion.
Add in the diced tomatoes (with juices) and chicken broth. Stir everything together, then bring it to a simmer. This is where the cozy soup magic begins!
Gently stir in the cheese tortellini and cook for 5–7 minutes until they float. Pour in the heavy cream and return the sausage to the pot. This step delivers creamy soup goals with next-level comfort.
Stir in the fresh spinach until wilted. Taste and adjust seasoning. Garnish with parsley or basil and a sprinkle of parmesan for that perfect finishing touch.
Notes
Feel free to adjust the level of spiciness by choosing mild or spicy sausage.
For a vegetarian version, substitute sausage with a plant-based alternative.
This soup can be stored in the refrigerator for up to 3 days.
