Ingredients

  • 1 tablespoon olive oil
  • 1/2 red onion, sliced
  • 2 garlic cloves, minced
  • 2 medium carrots, diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 9 oz cheese tortellini (fresh or refrigerated)
  • 2 cups fresh spinach (or kale)
  • 1/2 teaspoon Italian seasoning
  • Salt & black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil & shredded parmesan (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Toss in onions and garlic, and cook until soft and fragrant.
  2. Stir in the carrots and Italian seasoning. Pour in the broth and bring to a gentle boil. Let it simmer for 10–12 minutes.
  3. Add tortellini and cook according to package instructions (about 3–5 minutes).
  4. Stir in heavy cream and spinach, cooking just until spinach wilts.
  5. Season with salt, pepper, and red pepper flakes. Top with parmesan and chopped basil before serving.

Notes

  • This soup can be made with either vegetable or chicken broth depending on your preference.
  • Feel free to add other vegetables like peas or bell peppers for extra nutrition.
  • For a lighter version, you can substitute heavy cream with half-and-half or a non-dairy alternative.
